Slow Cooker Pork with Peach BBQ Sauce

Happy Monday! 

Quick Update: I'm so excited to update you on a new feature here at Mrs. Regueiro's Plate. You might have noticed that there is a Save Recipe button to each recipe post, making your and my life easier! You can save your favorite recipes to your own personal recipe boxes, along with any other recipes you might come across the bloggy-sphere. ZipList is a free online recipe box. They have free mobile apps, or you can use their website. You can access your recipe box from your phone or computer any time you want.

Once you have signed up for a ZipList account (totally free), anytime you hit this little "save" button on M.R.P. from now on, the recipe will be saved to your ZipList recipe box, and the ingredients will be added to your grocery list. Freaking. Awesome. If you already have certain ingredients, you can easily remove some items, or change the quantities of others.

ZipList partners with tons of food sites across the web, including Martha Stewart, Woman's Day, and The Daily Meal.

I'm all about simplifying and making life easier, and believe me this little feature keeps me organized with all my grocery shopping needs. I have been trying to stick to a budget, and using this feature has saved me tons of time and money. It groups the ingredients together in the grocery section that you would most likely find that item. Sometimes when you are shopping with a 2 month year old, and you only have 20 minutes to shop - you need to be fast on your feet to grab all those grocery needs. Plus, I can't tell you how many times I have forgotten an item on my grocery list because it was on the other side of the store and I was already in the check-out line.

Now back to this fantastic recipe that you should totally make for the Fourth of July. I was cleaning out my freezer, and checking out my frozen meat supply which consisted of chicken breasts/tenderloins/thighs, ground beef, and 2 or 3 bags of pork shoulder that I needed to use up. I do not use my my slow cooker/crock pot enough these days, and it always saves me precious time in the kitchen so I can tend to Elena and my other household duties. This quick to prepare recipe uses a couple pantry items and my favorite fruit of the season right now, peaches. Peaches and pork go together like summer and fun. Make my peach lemonade to complete the meal!

Slow Cooker Pork with Peach BBQ Sauce
Adapted from Clean Eating July 2012

I tablespoon olive oil
2 large onions, chopped
2 cloves garlic, minced
1 to 2 small peaches, peeled, pitted and chopped
15 ounces boxed or jarred diced tomatoes
6 ounces low-sodium tomato paste
2 tablespoons apple cider vinegar
1 tablespoon pure maple syrup
1 tablespoon Worcestershire sauce
2 to 3 pounds pork shoulder, pork butt, trimmed of visible fat
12 Hamburger buns

For the Slaw:
Juice of 1 orange
1 lime, zested and juiced
2 tablespoon nonfat plain Greek yogurt
1 1/2 cups napa cabbage, shredded
1 1/2 cups purple cabbage, shredded
1/2 cup fresh cilantro, chopped


1. Prepare the BBQ sauce. In a large skillet, heat the oil over medium heat. Saute the onions until translucent, and until tender, about 3 minutes. Reduce the heat to medium and add the garlic and peaches. Stir until combined and fragrant, about 3 minutes. Stir in the tomatoes, tomato paste, vinegar, maple syrup and Worcestershire sauce. Cook, stirring occasionally, for about 15 minutes. Using a hand immersion blender, puree until smooth. Or alternatively, place in a blender or food processor.

2. Place pork in your slow cooker/crock-pot. Add the BBQ sauce, cover and cook for 4 to 6 hours on high or 8 to 10 hours on low heat. Cook until the pork is fork-tender and shreds easily with tongs or fork.

3. Prepare the slaw. In a large bowl, whisk the orange juice, lime zest, lime juice, and yogurt. Add the shredded cabbage and cilantro. Cover and refrigerate until chilled, 20 minutes to 1 hour.

4. When ready to serve, spoon shredded pork onto desired hamburger buns and serve with slaw on top.

Yield: 12 servings

Review: Hands down my favorite new BBQ sauce. We have prepared a bacon-based BBQ sauce, but never one with peaches. Oh wowsers, it's simply sensational. The pairing of the tenderized pork and succulent peach BBQ sauce is yum-o-licious! We used King's Hawaiian hamburger buns for that extra sweet bite, but you can opt to use your favorite hamburger buns, too.
