Double Chocolate Zucchini Bread

Do you ever have one of those days where you crave something with chocolate? Something ooey-gooey sweet like chewy walnut brownies, chocolate chip cookiesbrookies or perhaps maybe a good ole candy bar. Nothing seems decadent enough than a sweet treat with chocolate. Don't get me wrong but I absolutely love a beautiful slice of apple pie, but sometimes with a sweet tooth like mine - chocolate is the only cure. My coworker had mentioned to me that chocolate zucchini bread is delicious and a great way to use up the abundance of squash that I had in my kitchen.

Staying on a healthy approach I figured that vegetables and chocolate are an interesting combination, and why not enjoy a sweet dessert while getting my veggie fix in. This is a delicious, sweet, dessert bread for all chocolate lovers. This is a moist and chocolaty bread that can be used for breakfast, dessert, or snacking. You could add some walnuts or pecans for extra texture, too. Also, you could make these as muffins and decrease the cooking time. What a wonderful way to enjoy chocolate and some vegetables, too.
Double Chocolate Zucchini Bread
Adapted from Baking Bites
2 cups all-purpose flour
1/2 cup unsweetened cocoa powder, sifted
1 cup sugar
2 teaspoon baking powder
1/2 teaspoon salt
2 large eggs
1/3 cup vegetable oil
3/4 cup buttermilk
1 teaspoon vanilla extract
2 medium zucchini, shredded (1 1/2 cups)
1 cup milk chocolate chips, plus extra for topping


Preheat oven to 350 degrees.

Grease a 9x5 loaf pan with cooking spray or butter.

In a large bowl, combine the flour, cocoa powder, sugar, baking powder, and salt. Whisk to combine.

In the bowl of the KA mixer, add the eggs, vegetable oil, buttermilk and vanilla and mix to combine. Slowly incorporate the dry ingredients to the wet ingredients until fully combined.

Add in the zucchini and chocolate chips until fully combined. Pour batter into loaf pan.

Bake for 50 to 55 minutes or until a toothpick inserted the center comes out clean. Let cool completely before slicing. Enjoy!

Review: This was a perfect cure for my chocolate fix - the bread was sweet and had just enough chocolate and you could not really taste the zucchini at all. The zucchini enhances the chocolate bread by keeping it moist. This would be a great way to trick your kiddos and adults into eating some extra vegetables, too.
